Butter385With paddle attachment mix butter and flour until crumbs form.For cocoa swap 45g flour with 28g cocoa powder and add 10g additional sugar
Whole Wheat Flour787.5Add icing sugar and salt and mix.
Icing Sugar87.5Pour in liquids and mix until rough dough forms.
Salt7Bring together by hand and clingfilm.
Cold Water87.5Chill, preferably overnight.

Ingredients:Method:
Flax Egg150Mix flax egg with cornstarch until smooth.
Cornstarch30Add melted butter, maple syrup, golden syrup, molasses, vanilla, cinnamon, breadcrumbs and and salt.
Butter50Whisk until smooth.
Maple Syrup400Add 250g chopped pecan pieces.
Molasses50Pour in to tart shell.
Vanilla25Decorate with 100g pecan halves.
Breadcrumbs100Bake for 30 mins at 170C.

Strawberry & Rhubarb3

Strawberry1359Mix rhubarb and sugar in pan and simmer until slightly soft.
Rhubarb660In seperate bowl mix strawberries, lemon juice, cornflour vanilla and salt.
Sugar9tbspAdd strawberry mix in to pand and simmer until fruit falls apart,
Cornflour3tspMix pectin with equal amount of sugar.
Lemon Juice3tbspStir pectin mix in to fruit, bring to a boil and leave on for 1 min whilst stiring.

Salt0.75tspTart gets finished with layer of vanilla pat and fruit mix poured on top.

Milk450Pour a splash of milk in a bowl with the cornflour and whisk.
Cornflour20Heat remaining milk with sugar and whisk until simmer.
Dark Brown Sugar40Add some of the hot milk to the cornflour mixture and pour back in to pan.
Chocolate350Heat and stir until thick and coats back of the spoon.
Sea Salt1Add chocolate and blend until everything is glossy and smooth.

Leave to chill in fridge.
